  1. I've been using a pellet smoker successfully for many years. For brisket, I use the Franklin method and for pork ribs, the 3-2-1 method is hard to beat. If you like extra bark, add a smoke tube and you'll be all set.

  4. Thanks for adding to the Black's story. You being a local, I trust your understanding is likely more accurate than mine. My report came from a media story I read at the time which may not have been completely accurate...you know how sketchy reporting can be these days. Regardless, the general point appears to be consistent...Terry took the awesome reputation of the Black family name and business as his own to compete with his family without permission. The story I read goes back many years so I can understand if the fallout eventually resulted in a feud despite early efforts to avoid it. Because of Terry's unethical behavior toward his family I will no longer spend money at his restaurants...it's not like he'll miss me with long lines routinely out the door. On the other hand, I take every opportunity to stop in at the original smokehouse in Lockhart which is still outstanding and among my favorites in Central Texas.
  5. TB's can be excellent. It also takes the prize for worst I've ever had (brisket that was so salty it was inedible), and I've had a lot of Central Texas BBQ over the past 45 years. It also ticks me off that Terry stole the Black's name from his extended family who are the owners of the original smokehouse in Lockhart without permission (he was their accountant). The owner of the original apparently didn't want to start a family feud so they didn't press it, but you know they had to be pi$$ed.

  8. That was almost targeting. He took a shoulder to the helmet with the defender's helmet narrowly missing from what I could see.
  9. Perhaps there were better plays to call, but the execution on that play was awful. No one got blocked well, period. Football is fundamentally about blocking and tackling. If you don't do the first, you're going to get the second. OSU got the 75 yd TD run because they blocked that play perfectly at all levels, i.e., they executed. On QE3's strip/score, what was the fundamental problem resulting in the strip? Cam completely failed to block Sawyer in a routine pass blocking situation...his only job on that play.
  10. Nothing but respect and appreciation for Quinn. He's a class act and has a bright future. Glad to see so many here understand what he did to bring the Horns back to greatness.
  11. If you watch that play, the blocking was poor so Sark was right. He's one to hold players accountable for executing the play which I suspect he learned from Saban. We weren't likely to punch it in on a power play so that doesn't leave many options.
  12. Agree completely. Unfortunately, some fans expect perfection, but that's impossible in football. He carried the team more often than not and should be commended and appreciated for an outstanding career while helping Sark rebuild. In addition, Ewers is an outstanding individual and a fine representative of the University. I wish him well in the NFL.
  13. Or Helms' 15 yard taunting penalty on that drive. Or Cam completely whiffing the block on Sawyer on 4th down.
  14. QE3 is an elite, cerebral, QB and we're fortunate to have him. I don't care what the googans say...I wouldn't trade him for any other college QB.
  15. If memory serves me, neither 5 yard penalty was consequential. What a difference it makes when that's the case.
