Cook it in a sous vide with herbs and butter, then sear it on the grill. Literally amazing every time. Quote

Expand Years ago BBQ Outfitters had a Green Egg Day, where they brought out new Green Eggs and had chefs in to grill up a specialty, everything from appetizers to desserts. Held the event at a restaurant I was bartending at for the day. Had chefs coming up to thee bar for drinks and they discovered I hadn't had time to get out and taste anything. They started to bring in samples of some of the best BBQ and grilled dishes I ever had. Quote

Expand I've been using a pellet smoker successfully for many years. For brisket, I use the Franklin method and for pork ribs, the 3-2-1 method is hard to beat. If you like extra bark, add a smoke tube and you'll be all set. Quote

My stick burner is the go-to in my arsenal if I'm not needing to sear something.. Have been using the Thermoworks RFX with great success since they released them last summer/fall. I was planning to give my stick burner its annual cleaning/reseasoning this weekend, but the rain has changed my plans. Maybe next weekend we'll get her all spic & span again and start building up next year's mess on a butt or something. 1 Quote
