  4. Five-star LB Xavier Griffin has backed off of his verbal pledge to USC. Texas made a major move on their multi-day visit in April. I would expect an official visit to be locked to Texas soon based off that trip in the spring. Texas will be a player here moving forward.

  7. I've got the same, the tray does a nice job of adding smoke when you're grilling but it doesn't do a good job with slow and slow like an offset or a kamado. The solid fuel insert is fun to use too. And the rotisserie is outstanding.
  8. If you're new to smoking, port (Ribs, Butt) is easier to work with than beef brisket.

  10. Oddly enough. Easton Royal’s name came up when I was in DFW earlier this weekend as an absolute stud in 2027. Glad to see Texas get in the mix.

  12. Not much going on currently. About an hour until I pull up to Destrehan for the spring game between Texas CB commit Hayward Howard Jr. and Texas target and LSU WR commit Jabari Mack. Until then, racing this Honda CRV to NOLA.

  20. Spoke to a coach just now who told me they played against Peyton Houston in 7v7 this spring who came away amazed at his arm talent. This coach said Houston, in two days of competition, had maybe a handful of incompletions the entire weekend. Precise, on time and creative was the way his performance was described. The coach added that Houston was one of the top arms he had seen in a few years.

  22. I have a 42-inch built in Alfresco grill/smoker which is a gas grill but does a great job. Also have a separate smoker which I frequently do ribs and brisket. Like to grill steaks which I season (salt and pepper (on I like Cosmos steak seasoning) and then cook on the grill to about 125 degrees and then transfer onto a iron skillet which I set in the grill. I put butter, garlic and herbs (Thyme or Rosemary) and spoon this over and under the meat generously several times with that and then take it out and let it rest. I have done steaks numerous different ways, but this method has produced the best results according to my palate.

  24. If you are around the French Quarter at night, stay on the busy streets. It isn't safe to go off the beaten path. For sandwiches, ask around, there are tons of places to get po'boys, and if in the French Quarter head over to Central Grocery and Deli on Decatur to get a muffuletta. They claim to be the originator of those. For something simple and quick also try red beans and rice (comes with a link of sausage), gumbo, or jambalaya. Just ask around.
